A Note From The Chef:
The M&K Salad starts off with roasting diced sweet potatoes and cooking quinoa in vegetable stock. Kale and mushrooms are sauteed in a pan then fresh garlic and vegetable stock are added. The salad then braises in the stock. This salad is topped with feta cheese.
The taste of the feta with the crunkiness of the kale plus the sweetness of the sweet potato blends perfectly.
This meal is great for my vegan & vegetarian clients. This meal is also a great microbase to pair with our bulk prepared speciality chicken breast and london broil options.
